CARBON VS STAINLESS STEEL

    • Harder to maintain surface finish
    • Must stay dry
    • If cutting acidic food knife is likely to patina
    • Typically higher hardness compared to stainless steel
    • Typically lower toughness compared to stainless steel
  • Stainless Steel
    • Easier to maintain
    • Resists rusting/patina
    • Typically lower hardness compared to carbon steel
    • Typically higher toughness compared to carbon steel

KNIFE BLADE FINISH

  • Polished: a near mirror finish, finish that is easiest to scratch

  • Sand Blasted: matte finish

  • Stone Washed: on carbon steel will be dark grey/black, ceramic stones adds a random pattern that the easiest to maintain and will hide future scratches

LASER ENGRAVING
